Kingfish – Fillets, Skinned and Boned

Kingfish is a game fish and not regularly seen in Wellington as it enjoys a warmer climate. It has been popping up more over the past several summers. Kingfish is one of the best fish for sashimi due to its firm, meat like texture. Be sure to slice thinly, or if you want to cook it, attempt to sear Kingfish rather than cook it all the way through.
