Caught fresh on the wild West Coast of the South Island, our whitebait is a true Kiwi classic — sweet, delicate, and full of flavour. Around here, it’s a bit of a family tradition… Tony reckons he makes the best whitebait fritters in Wellington, and he’s been giving Alfonso a hard time about it ever since. (Nonna says she’s staying out of it — but we all know who she’d pick 😉).
